Virtually Cholesterol-free Pumpkin Pie

Yield: Two 9 in. pies   Baking temp: 425° F.

Ingredients:
1 (29 oz.) can pumpkin 1 1/2 c. sugar 1/2 t. salt 2 t. cinnamon 1 t. ginger 1/2 t. cloves 2 (12 oz.) cans evaporated skim milk 1/2 c. Ultra Gel 2 unbaked 9″ pie shells

 

Directions:
Combine first seven ingredients in mixing bowl. Gradually add Ultra Gel, stirring constantly with wire whisk. Pour into 2 unbaked pie shells. Bake at 425¡ for 10 minutes, then reduce heat to 325¡ and bake 45 minutes until set (knife test is not accurate). Filling will be soft. Cool.
